Pudding CakePudding Cake
Ingredients
1 package (18-1/4 ounces) yellow cake mix
1 package (3.4 ounces) instant pudding mix
1 cup lemon-lime soda or club soda
½ canola oil
4 eggs
½ cup chopped walnuts, pistachios, chocolate chips, etc.
FROSTING:
1 cup cold whipping cream
1 package (3.4 ounces) instant pudding mix
¾ cup cold milk
2 teaspoons confectioners sugar
chopped nuts, mini chocolate chips, etc. for garnish
Directions
In a large bowl, combine the first five ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes; stir in walnuts.
Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
For frosting, in a large bowl, beat cream, milk and pudding mix and confectioners sugar on high until stiff peaks form. Spread over cake. Sprinkle with topping. Refrigerate for about 30 minutes before cutting. Refrigerate leftovers. Yield: 12-15 servings.
